This recipe was really delicious:
Slow-cooked bbq gammon
Serves: 4 (there was enough for six of my sized portions) Prep time: 30 minutes Ready in: 60+ mins Syns per serving:FREE
Ingredients
1.2kg boneless gammon joint, all fat removed 2 onions, thinly sliced 3 peppers (green, yellow and red), diced 1 carton of passata 4 tbsp tomato puree 1 tsp ground cinnamon 1 tsp ground ginger 1 tsp mustard powder 2 tsp smoked paprika 6 tbsp Worcestershire sauce 6 tbsp balsamic vinegar 2 tbsp soy sauce 6 tbsp granulated sweetener zest of 1 orange
Method
Place the gammon in a large saucepan, cover with water and bring to a boil. Boil for 12 minutes before tipping the water away and repeating the process twice more with fresh water. This is to remove excessive saltiness in the gammon. Remove the gammon and place on a chopping board. Cover the bottom of the slow cooker with the sliced onions and diced peppers and sit the gammon on top. Add all of the other ingredients to the slow cooker and cook on medium for 5-6 hours. The gammon is ready when it falls apart when pulled with two forks. When it's ready, pull the entire gammon ensuring that the sauce is fully incorporated.

Sorry to hear of your off course Beef. Was wondering why you had been a bit absent, but am not prone to panic, as life does interfere with the virtual world. As it is, was, and perhaps will be, I've stayed away from this thread largely (no pun intended) as being somewhat menopausal it's not fair when trying to decide what weight one will be in the future. That, and most of my recipes are not particularly great for slimming down, though quite tasty for those that are willing to walk a couple of blocks instead. Meaning, I think that's why my cousin doesn't want my recipe for Spinach Rolls, as they are probably not slimming, but, well, yum? Of course that does guarantee me an invitation for certain holidays.

Thanks Zenrider. . . "the in-laws" are often a maligned part of the family and mine are both gone now, but they were wonderful. I just have been unable to think about much else these last couple of weeks.
